Baked Herb-Crusted Salmon

  • Ingredients: 4 salmon fillets, 1/2 cup panko breadcrumbs, 2 tbsp fresh chopped herbs (dill, parsley, or basil), zest of 1 lemon, 2 tbsp olive oil, salt, and pepper.
  • Method: Preheat the oven to 400°F (200°C). In a bowl, mix breadcrumbs, herbs, lemon zest, and olive oil. Season salmon with salt and pepper, then press the breadcrumb mixture onto each fillet. Place on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until salmon flakes easily with a fork. Serve with a side of steamed asparagus or mixed greens.
