Grilled Lemon Herb Chicken
- Ingredients: 4 boneless, skinless chicken breasts, juice of 2 lemons, 3 tbsp olive oil, 3 cloves garlic (minced), 2 tbsp fresh chopped herbs (such as parsley, thyme, and rosemary), salt and pepper to taste.
- Method: In a bowl, whisk together lemon juice, olive oil, garlic, and herbs. Add salt and pepper. Marinate chicken breasts in this mixture for at least 30 minutes (up to overnight for deeper flavor). Preheat the grill to medium-high and cook chicken for 6-7 minutes per side, or until internal temperature reaches 165°F (74°C). Serve with a side of grilled vegetables or a fresh salad.
