  • Ingredients: 1 lb lean beef strips (like sirloin or tenderloin), 1 bell pepper (sliced), 1 cup broccoli florets, 1 carrot (sliced thin), 3 tbsp low-sodium soy sauce, 1 tsp grated ginger, 2 cloves garlic (minced), 1 tbsp olive oil, 1 tsp sesame oil (optional), green onions for garnish.
  • Method: Heat olive oil in a skillet over medium-high heat. Add garlic and ginger, sauté until fragrant, about 1 minute. Add beef strips and cook until browned, about 3 minutes. Add vegetables and soy sauce, stir-frying for another 5-7 minutes until veggies are tender-crisp. Drizzle with sesame oil, garnish with green onions, and serve over brown rice or quinoa.
